As a concept what Homaru Cantu and Ben Roche has done blows my mind. As a technique it's still yet to be perfected, but then again, isn't everything? People on the discussion boards have questioned the nutritional values of the food stuff, as well gone into the faults of the current meat industry. Putting in as much effort as possible into using local produce is to be commended. Mindfuck is awesome.
